

Truffles Without Hussle

Far from the French Périgord, they are picked up by the shovelful along the Swiss Jura, in the limestone lands of the northern Vaud region, the truffle hunters have a special relationship with their truffle dogs (Labradors, Romagnol water dogs or Australian shepherds), who roam the forest in search of the precious product. Once considered the poor man's potato, or even the devil's excrement, the truffle is now a luxury pro-duct. Some farmers cultivate it in truffle fields by planting hectares of host trees. Four enthusiasts tell us about the mysteries of the black diamond, whose earthy flavors delight the palate of gourmets around the world.
